Glacio offers large scale industrial freezing and thawing in especially designed wind tunnels. Each tunnel can freeze more than 20 tonnes of fresh goods per 24 hour time-period. Fast freezing gives huge quality advantages for the frozen product. A fast freezing gives less cellular damage in the frozen product. If the product is thawed in the appropriate way, the minimized cellular damage will contribute to a lessened drip loss as well as a juicier product.
