What you must know about Super cool
Super cooling means storage at a temperature just below freezing, which improves the quality compared to traditional freezer storage.
By super cooling, ice crystals are formed in the muscle tissue without the product being frozen, and the cold will be compartmentalized in the product. As opposed to ordinary freezing, the process won't puncture the crystals in the cells. The core of the filet won't freeze, and keeps a higher temperature than the surface.
The main point of super cooling is that the goods keep their properties fresh, whilst simultaneously doubling or tripling the lifespan of the product. This offers more options for operators in the food industry. An example of this is that some goods that as of now are sold as frozen, can be sold as fresh at a higher price.
With a long lifespan of the fresh product the owner of the goods has the option of choosing new logistics solutions for the products. Transport by ship gives large cost savings, while also being a much more environmentally friendly solution. Longer lifespan means a longer sale period, which reduces the risk of wastage.
